Instructions
Preheat your oven to 400Β°F (200Β°C). Line a large baking sheet with parchment paper or lightly grease it with olive oil.
In a bowl, toss the halved potatoes with 2 tablespoons olive oil, half the minced garlic, Italian seasoning, smoked paprika, salt, and pepper. Arrange them cut-side down on one half of the pan.
Pat chicken thighs dry. Rub with remaining olive oil, minced garlic, salt, pepper, and coat with Parmesan cheese. Place on the other half of the pan, making sure they donβt touch the potatoes.
Bake for 35β40 minutes or until the chicken reaches an internal temp of 165Β°F and the potatoes are tender and crispy. For extra crisp, broil for 2β3 minutes at the end.
