For the Muffins:

  • 45 cups day-old brioche or challah bread, cubed (about ½-inch pieces)

  • 3 large eggs

  • 1 cup whole milk (or ¾ cup milk + ¼ cup heavy cream)

  • 2 tablespoons granulated sugar

  • 1 teaspoon pure vanilla extract

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon salt

  • 2 tablespoons melted butter (plus more for greasing the pan)

For the Cinnamon-Sugar Topping:

  • ¼ cup granulated sugar

  • 1 tablespoon ground cinnamon


Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 12-cup muffin tin with butter or non-stick spray, or line with muffin liners.

  2. Cube the bread into small, bite-sized pieces and place in a large mixing bowl.

  3. In a separate bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, salt, and melted butter until smooth and well combined.

  4. Pour the custard mixture over the bread cubes. Gently fold until the bread is fully coated. Let sit for 5–10 minutes so the bread absorbs the liquid.

  5. Divide the mixture evenly among the 12 muffin cups. Press down gently to pack and flatten the tops.

  6. In a small bowl, mix together ¼ cup sugar and 1 tbsp cinnamon for the topping. Sprinkle generously over each muffin.

  7. Bake for 22–25 minutes, or until the tops are golden brown and slightly crisp.

  8. Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool slightly before serving.

  9. Serve warm, optionally with a drizzle of maple syrup, a dusting of powdered sugar, or whipped cream.

  • Use stale bread for best texture—fresh bread may turn mushy.
