1 (10.5 oz) can cream of chicken soup
-
1 cup sour cream
-
1 packet ranch seasoning mix (about 1 oz)
-
2 cups shredded cheddar cheese, divided
-
6–8 slices cooked bacon, chopped
-
1 (32 oz) bag frozen tater tots
-
1/2 cup chopped green onions (optional)
-
Salt & black pepper to taste
-
Cooking spray or butter for greasing the baking dish
Instructions
-
Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray or butter.
-
In a large mixing bowl, combine cream of chicken soup, sour cream, and ranch seasoning. Stir until smooth.
-
Add the cooked chicken, half the shredded cheese, chopped bacon (reserve some for topping), and green onions (if using). Mix well.
-
Spread the mixture evenly in the prepared baking dish.
-
Top with a single layer of frozen tater tots, arranged evenly.
-
Sprinkle the remaining cheese and reserved bacon over the top.
-
Bake uncovered for 40–45 minutes or until hot and bubbly, and the tater tots are golden brown and crisp.
-
Let cool for 5 minutes before serving. Garnish with extra green onions if desired.
Notes
-
Use rotisserie chicken for an easy shortcut.
-
For a little kick, stir in 1–2 tablespoons of hot sauce or diced jalapeños.
