  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.

  2. Sauté Aromatics: In a skillet over medium heat, cook the onion and garlic in a little olive oil until soft and fragrant (about 5 minutes). Let cool slightly.

  3. Mix Meatloaf: In a large bowl, combine the ground beef, sautéed onions and garlic, breadcrumbs, egg + yolk, milk, ketchup, mustard, Worcestershire sauce, salt, pepper, and spices. Mix gently until just combined—don’t overwork it!

  4. Shape & Set: Press the mixture into a loaf pan or shape it by hand on a lined baking sheet.

  5. Make the Glaze: In a small bowl, mix ketchup, brown sugar, and apple cider vinegar. Brush half over the meatloaf.

  6. Bake: Bake for 50 minutes, then brush the remaining glaze on top. Return to oven for another 10 minutes or until the internal temperature reaches 160°F (71°C).
